Internationally renowned for its exceptional quality and intense aromatic profile, Teruel black truffle is one of Aragón’s most exclusive gastronomic products. The province’s unique climatic and geological conditions, together with the decades of expertise accumulated by Teruel’s truffle growers, result in a truffle of outstanding quality, highly prized by chefs and consumers around the world. The European recognition as a Protected Geographical Indication (PGI) guarantees the product’s origin, traceability, and compliance with a strict set of specifications that certifies its authenticity.

Geographic area

The PGI production area covers the entire province of Teruel, where every stage of the process takes place: cultivation, harvesting, preservation, grading, and packaging.

The region’s natural conditions—including high altitudes, calcareous and stony soils, and a continental Mediterranean climate with cold winters and dry summers—provide the ideal environment for the cultivation of black truffle.

Regions

Production extends across the entire province of Teruel, with the highest concentrations found in the following regions: * Gúdar-Javalambre * Maestrazgo * Comunidad de Teruel * Sierra de Albarracín * Matarraña Teruel is home to the largest area dedicated to black truffle cultivation in the world and is Spain’s leading black truffle-producing region.

Season

Harvesting usually takes place between 15 November and 15 March, the period during which the truffle reaches its optimum stage of ripeness and fully develops its distinctive aroma.

Fresh black truffle of varying sizes, marketed either whole or in pieces, and classified into Extra, First, and Small categories according to its appearance and weight. Its quality is determined by its level of ripeness, firmness, freedom from mould, and its distinctive aroma.

Teruel Black Truffle is an underground fungus of the species Tuber melanosporum Vitt., which grows in symbiosis with the roots of forest tree species such as holm oak, Portuguese oak, kermes oak, and hazel.

Harvesting is carried out using traditional methods with specially trained dogs, which locate ripe truffles without damaging the soil or the fungal mycelium, ensuring the sustainability of the cultivation process.

Once harvested, the truffles are refrigerated and packaged within the province of Teruel to preserve their organoleptic qualities and ensure maximum freshness until they reach the consumer.
