Geographic area
It covers the regions of Tarazona y el Moncayo and Campo de Borja, including 34 municipalities and more than 2,500 hectares of olive groves, forming a homogeneous morphological, geographical and historical unit.

Olive harvesting begins between late October and early November in order to obtain the greatest possible intensity of fruitiness and avoid damage from the weather.

- Oils with the Sierra de Moncayo Protected Designation of Origin have a minimum oleic acid content of over 70%.
- Low linoleic acid content (maximum 11%).
- K270 values (oxidation indicator) below 0.12, reflecting good oil preservation.
- All of this results in an oil whose hallmark is its harmony.
Sierra del Moncayo oil is mainly produced from a combination of five olive varieties:
- Empeltre: minimum percentage of 70%
- Arbequina: maximum percentage of 25%
- Negral, Verdial or Royal: presence of at least one of these varieties, without the total exceeding 5%
