Teruel ham/Teruel shoulder ham
Teruel Ham / Teruel Shoulder Ham is the result of a close relationship between the environment and the traditional practices of its people. The Protected Designation of Origin guarantees that this know-how, combined with the excellent qualities of selected raw materials, results in a product with a clearly differentiated identity. Thanks to the climatic conditions of the area, the curing process is carried out slowly, resulting in a ham with a lower salt content without compromising its intense flavour. Through a rigorous traceability and certification system, consumers are guaranteed to purchase an authentic product, the result of a consolidated working method and benchmark nutritional quality.
Geographic area
The production area (rearing, slaughter and cutting of pigs) of the Protected Designation of Origin ‘Jamón de Teruel/Paleta de Teruel’ consists of the province of Teruel, and within this, the area where the cured hams and shoulders are produced consists of those municipalities whose average altitude is not less than 800 metres, provided that the drying room is at an altitude of 800 metres or more above sea level.

The entire province of Teruel, especially in areas above 800 metres.
Season
The production process consists of five steps: salting, washing, post-salting, curing (drying and maturation), and aging. The minimum curing time for hams is 60 weeks, and for cured shoulder hams, it is 36 weeks.
