There are aromas that awaken memories, flavors that tell stories, and treasures that do not shine, but beat. Such is the black truffle in Aragón: discreet, mysterious, profoundly ours. Tuber melanosporum lives hidden beneath the ground, in symbiosis with holm oaks and oaks, waiting to be discovered by those who know how to read the signs of the landscape. Finding it requires patience, knowledge, and a special sensitivity to interpret what the land whispers.

The perfect moment: when it's picked up

The truffle season in Aragon begins in mid-November and extends well into March. Although specimens can be found as early as December, it is in January that the truffle reaches its peak: a deep aroma, a well-rounded flavor, and a quality that captivates. During these months, the region is transformed: producers, chefs, markets, and visitors immerse themselves in the world of the truffle, celebrating its presence as one celebrates authenticity.

Aragon, land of truffles and ancient knowledge

What many don’t know is that Aragon is the world’s largest producer of black truffles. Regions like Moncayo, Daroca, Campo de Cariñena, Sobrarbe, Ribagorza, Jacetania, and the entire province of Teruel are home to truffle plantations and forests that supply kitchens around the globe. This is no coincidence: the demanding climate, the calcareous soils, and the expertise of generations of farmers have transformed the truffle into an agri-food jewel that bears the hallmark of our land.

Harvesting with respect: the art of the truffle hunter

Truffles aren’t plucked, they’re discovered. There’s no room for improvisation: dogs mark the spot, and the truffle hunter delicately extracts the fungus, taking care of the land so the cycle can repeat itself. It’s a sustainable, almost ritualistic process that protects the ecosystem and ensures this gift of nature continues to flourish year after year. Over time, the truffle sector has transformed wild harvesting into professional cultivation. The truffle hunter’s experience has been combined with research and technical knowledge, leading to mycorrhizal holm oak plantations that now cover thousands of hectares in our region. Thanks to this, Aragon has gone from searching for truffles in the mountains to producing them with sustainable and controlled methods, becoming a world leader in modern truffle cultivation, where tradition and science go hand in hand.

Fairs, markets and events: the truffle calendar

Truffle season is also a time for gatherings. Fairs, markets, and gastronomic events offer the chance to experience truffles from every angle: buying them fresh, trying them in tapas, discovering recipes, or simply letting their aroma captivate you. Some of the most noteworthy events include:

  • VERATRUF – Vera de Moncayo Truffle Fair (Zaragoza). Held in January, it marks the start of the local truffle season. There are direct sales, tapas, workshops, and activities for all ages. In 2025, it was held from January 10th to 12th.
    Zaragoza Province Truffle Fair. It brings together producers, restaurateurs, and truffle enthusiasts. In 2025, it took place on February 13th.
  • Black Truffle Days in Campo de Daroca (Zaragoza). Held from late January to early February, it features talks, tastings, and gatherings to learn about local truffles. In 2025, it took place from January 31st to February 2nd.
  • Fresh Truffle Market of Graus (Huesca) Every Saturday afternoon, from November to March. Ideal for buying directly from the producer. In 2025, it took place on December 7, 14, and 28; January 11 and 25; February 8 and 22; and March 8 and 15.
    Trúfate (Huesca, traveling event) Popular tastings and showcookings that bring truffles from town to town. In 2025, it took place on February 1 in Benasque, February 15 in Binéfar, and March 1 in Huesca.
  • Black Truffle Gastronomic Days of Teruel From mid-February to mid-March, special menus can be found in dozens of restaurants. The 13th edition in 2025 took place from February 13 to March 16.
  • Somontano Truffle (Huesca): Tastings and pairings celebrating the connection between wine and truffles. Organized by the Somontano Wine Friends Circle, this year’s event took place on February 20th.
  • FITRUF – International Truffle Fair: For over twenty years, this specialized fair has been held in early December in Sarrión (Teruel), bringing together various professionals from the truffle cultivation sector.

Where the Truffle Comes to Life: Interpretation Center in Aragon

In Sarrión (Teruel), the epicenter of the black truffle, stands Túber Universum – Truffle Interpretation Center, a pioneering space in Europe dedicated entirely to this exceptional fungus. Here, visitors can interactively explore the complete life cycle of Tuber melanosporum: from its formation underground and symbiosis with the host tree, to its harvesting, selection, and gastronomic value. Sensory panels, audiovisual displays, and immersive experiences illustrate how the truffle has transformed the landscape, the rural economy, and the cultural identity of the region. This center reinforces Aragon’s role as an international leader in knowledge, innovation, and promotion of the black truffle.

Much more than an ingredient

The black truffle is part of our culture, of our way of understanding the land and the kitchen. Its pursuit unites the truffle hunter with their dog, the farmer with the chef, and the visitor with the taste of authenticity. Each bite encapsulates the soul of Aragon: the quiet effort, the patience, the camaraderie, and the pride of sharing something already recognized worldwide.
