Oil from Bajo Aragón

Oil from Bajo Aragón is an extra virgin olive oil with Protected Designation of Origin (PDO) status, which comes from the natural region of Bajo Aragón, located in the west of the Autonomous Community of Aragón between the provinces of Zaragoza and Teruel. The Empeltre variety of olive tree accounts for 95 per cent of the area under cultivation in the region, reflecting both its economic importance and its link to the territory.

Geographic area

The geographical area has a perimeter of 469.4 kilometres and a total surface area of 6,380 square kilometres. Olive cultivation covers 36,600 hectares, of which 31,560 are of the Empeltre variety, 2,200 of the Arbequina variety and 1,000 of the Royal variety, representing 95 per cent of the area under cultivation in the zone, which indicates both its economic importance and its link with the territory.

Season

Harvesting takes place from mid-November onwards, when there are no longer any green fruits on the tree, by means of “milking” or shaking the branches.

  • The oils protected by the ‘Aceite del Bajo Aragón’ designation of origin come exclusively from the Empeltre, Arbequina and Royal varieties, of which Empeltre accounts for a minimum of 80% and the other varieties a maximum of 20%.
  • In terms of physical and chemical characteristics, it has a maximum acidity (% oleic acid) of less than or equal to 0.80, a maximum peroxide value of 20 and K270 values (oxidation indicator) of less than 0.15.
  • The Empeltre variety dominates oil production in Lower Aragon, accounting for most of the crop thanks to its adaptability to the region’s climate and terrain. To maintain the product’s reputation and traditional character, the Arbequina and Royal varieties are used only in small proportions, complementing the Empeltre without altering its predominance or the productive qualities that make this oil unique.
